Fabulous spiced red cabbage is a wonderful vegetarian gluten free accompaniment to stews and roasts. Try spiced red cabbage with lentil and pumpkin seed roast and crispy roast potatoes or mashed potatoes.
The spiced red cabbage is an easy recipe suitable for any vegetarian meal. It tastes even better heated up the next day and also freezes well.
1 tbs vegetable oil
1 small red cabbage
1 red onion
1 cooking apple
1 cinnamon stick
2 star anise
2 tbs soft brown sugar
150 ml red wine
2 tbs cider vinegar
1. Finely slice the red cabbage and red onion and grate the cooking apple
2. Heat the vegetable oil in a large heavy pan and add the chopped ingredients stir well to ensure the oil is evenly distributed
3. Add the cloves, cinnamon, star anise and sugar. Cook until the sugar is dissolved
4. Next add the cider vinegar, stir well and then the red wine. Cover and cook on a low heat until the cabbage is very soft ~40-50 mins (add more liquid – wine or water – if it becomes too dry). Remove from the heat and either carefully remove the hard spices or issue a warning to your dinner guests and serve.
