This delicious vegetarian gluten free pilau rice (or even pilaf rice) is a bit of a cheat but who cares when it tastes great and is such an easy recipe. It uses the same basic recipe as plain rice but with spices. Use as an accompaniment with any curry dish. Great cold as a salad with gram flour quiche or chickpea and walnut salad.
For a Mediterranean rice exchange the spices listed for 2 cloves garlic, 1 tsp oregano, 0.5 tsp chilli flakes, 1-2 strand of saffron and 0.5 tsp gfv bouillon.
1 cup of white basmati rice
2 cups of boiling water
1 tsp turmeric powder
1 cinnamon stick
2 bay leaves
1 tsp toasted cumin seeds
5 cardamoms pods (bashed to split them)
0.5 tsp gfv bouillon
1. Place the rice in a microwave proof bowl. Add the boiling water and stir to ensure there are no clumps of rice
2. Add all the spices and stir well
3. Cover the bowl with a lid (slightly ajar) or a piece of damp kitchen roll (smooth down the over the sides of the bowl to create a seal)
4. Microwave of medium power for 5 mins and leave to stand for a further 10 mins. (You may need to slightly adjust your power and cooking time depending upon your microwave).
