This gluten free vegan spicy peanut dressing (or satay sauce if you prefer) could not be more simple (or delicious) – and there is hardly any washing up! Not your typical Thai recipe but just as good – an easy sauce. Serve as a dip with crudite or as a hot dressing for salads such as rice noodle salad, chopped green and root salad or a hot dip with fried tofu or satay skewers.
4 tbs crunchy peanut butter (unsweetened and unsalted)
2 cloves garlic
2 cm root ginger
1 red or green chilli (to taste)
1 tbs tamari (or other gluten free soya sauce)
4 tbs warm water (less or more depending upon consistency required)
1. Skin and crush the garlic and place in a microwave proof jug
2. Dice the chilli (no need to remove seeds), grate the root ginger and add to the crushed garlic
3. Add the juice of half the lemon, the peanut butter, 2 tbs warm water and mix well
4. Place the jug in the microwave on high power for 30 seconds and stir. If the sauce is too thick add more warm water as required. Place back in the microwave for a further 30 seconds until heated through.
