This chopped green and root salad is great for summer picnics and a great accompaniment to a main meal. Carrots, spinach and celery are store cupboard favourites and great in salads which makes this a great fall back meal. Try other seasonal vegetables such as grated celeriac in place of celery. Try with potato salad and chickpea and walnut salad.
1. Finely slice the spinach and add to a serving bowl and add chopped celery
2. Grate the carrot and white cabbage and add to the bowl
3. Make the dressing and stir in. Season to taste
