Simple and delicious. Mango and passion fruit is not really a recipe but it is too good not to share. A good recipe for magoes that are very ripe. Goes great with gluten free vegan ice cream (Swedish Glace is perfect) or sorbet. You could also use the ingredients for a delicious smoothie recipe – blend the ingredients and thin with a little almond milk.
1 passion fruit
1 tbs lime juice
1. Cut the mango in half lengthwise (around to stone), score the mango flesh in to cubes, turn inside out and cut out the flesh. Place in a small mixing bowl
2. Cut the passion fruit in half and scoop the seeds over the mango
3. Add 1 tbs lime juice and mix well. Serve.
