Apple crumble

This apple crumble is the best gluten free vegan pudding ever. It is such an easy recipe to make and the crumble texture is so light and crunchy it is a joy to eat with custard or soya cream. One of my favourite recipes and one of my favourite desserts.

There is no need to pre-cook the apples. They cook in the oven and retain a nice texture this way. Adding 1 tsp cinnamon to the apples works well. Some people like to add raisins to apple crumble. It is a personal preference but YUCK! Keep it simple and delicious.

Ingredients
240 g gfv rice flour
120 g gfv margarine (hard preferred or straight from the fridge)
60 g sugar
2-4 tbs cold water
500 g cooking apples

Method
1. Preheat the oven to 180 C
2. Peel and core the apples and cut in large chunks. Evenly spread the apples in a baking dish (~4 x 20 x 24 cm)
3. Place the rice flour in to a large mixing bowl. Chop the margarine in to chunks and rub in to the rice flour using finger tips. It will begin to look like breadcrumbs. Add the sugar and rub in gently until well mixed
4. Sprinkle the mixture on top of the apples and place in the oven for approximately 40 mins until the apples are soft and the crumble is lightly coloured and crunchy. Serve.
